The EESC issues between 160 and 190 opinions, evaluation and information reports a year.
It also organises several annual initiatives and events with a focus on civil society and citizens’ participation such as the Civil Society Prize, the Civil Society Days, the Your Europe, Your Say youth plenary and the ECI Day.

The EESC brings together representatives from all areas of organised civil society, who give their independent advice on EU policies and legislation. The EESC's326 Members are organised into three groups: Employers, Workers and Various Interests.

U svrhu doprinosa sastanku na vrhu UN-a o prehrambenim sustavima 2021. EGSO je 28. svibnja održao internetsku raspravu čiji je cilj bio razmotriti slabosti i nejednakosti europskih prehrambenih sustava i utvrditi kako ostvariti ravnopravnije i pravednije lance opskrbe. Govornici na visokoj razini iz UN-a, Europske komisije i Europskog parlamenta iznijeli su svoja stajališta o promjenama koje su nužne za jačanje jednakosti, pravednosti i pristupa temeljenog na pravima u tranziciji prema održivijim prehrambenim sustavima.
Pandemija COVID-a 19 znak je upozorenja da je vrijeme za promjene. Iako su poljoprivrednici i radnici u prehrambenom sustavu bili na prvoj liniji borbe s krizom uzrokovanom COVID-om 19 i kontinuirano su Europljane i Europljanke opskrbljivali hranom, „ova je kriza jasno pokazala da se opskrba hranom „od polja do stola“ ne može uzeti zdravo za gotovo“, izjavio je Andreas Thurner, predsjednik Tematske studijske skupine EGSO-a za održive prehrambene sustave.
EGSO je proteklih godina osmislio nekoliko prijedloga i konkretnih ideja koje se mogu sažeti u pet skupova preporuka koje mogu doprinijeti sastanku na vrhu UN-a o prehrambenim sustavima:
I. Poticati sveobuhvatne i integrirane prehrambene politike
II. Promicati zdraviju i održiviju prehranu
III. Zajamčiti poštene cijene i zabraniti nepoštene trgovačke prakse
IV. Ojačati potencijal kratkih lanaca opskrbe hranom i agroekologije
V. Zajamčiti strukturirano uključivanje i sudjelovanje civilnog društva.
